Carousel Candies Bird Nest Recipe

Happy Easter! We are sharing famous Carousel Candies recipe for Easter bird nests. This no-bake recipe is fun and easy, perfect for all hands to join in and make amazing spring memories.

It was interesting for me to learn why Easter eggs are used for Easter. It is a common element in various cultures for spring time. Eggs, in general, are a symbol of fertilizing and rebirth. For Christians, Easter eggs symbolize the empty tomb of Jesus, from which Jesus is resurrected.

Inspired by all things spring time (and with Easter egg nests on my mind), I enjoyed a recent walk down historic Monterey Fisherman’s Wharf. I took the time to really take in the visual feast of all of the Easter handmade items at Carousel Candies.

 I do love that they are a family owned business, with an amazing history on Monterey Bay. The products, so unique and perfect for Easter Sunday delights. They also make the most addictive huckleberry confections and sell my autographed Huckleberry Hill books. I feel so honored that they support me as a local author and blogger.

I asked Elizabeth Elves, the business owner of Carousel Candies, if there was a gourmet confection recipe that she would recommend making at home. She said that the ‘haystacks’ recipe makes an adorable Easter bird nest. Here is her recipe:

-Bird Nest Recipe-

Ingredients:

Favorite high quality chocolate (Carousel Candies only uses the very best Belgium chocolate) either milk chocolate, dark or white

Fresh shredded coconut

Little mini jelly beans (for eggs in the nest)

Double Boiler

Cupcake liners

Steps:

Over double boiler gently stir and melt chocolate of choice. Add in fresh shredded coconut once the chocolate is melted and smooth, add enough coconut to make thick. Spoon into cupcake cup and indent a ‘nest’ shape with thumb or spoon. Add jelly beans for eggs. Enjoy!
