-Super Simple Fourth of July Salad-
Happy 4th of July! This will be the first 4th of July without my mom (Nonna Cathy) in the parade (Anne kept the tradition of the Nonna Mobile alive for 2019, thank you Anne). We also are missing my dad and his amazing BBQ. In honor of family and memories I would like to share this simple salad recipe featuring local produce. The photos bring back many happy memories. Enjoy the holiday, I hope that you are able to celebrate America surrounded by love and joy.
If you are at Monterey Bay California on Thursday, July 4th celebrate with us. I will be in the Patriotic Parade, at 10 a.m. (We are proudly sponsored by Cardinale Motors.)
Monterey’s 4th of July Parade is not to be missed and starts at 10 am at the corner of Alvarado and Pearl streets.
The City of Monterey’s free “Big Little Backyard Bar-B-Que and Entertainment Extravaganza” then follows at 11 am at Colton Hall Lawn at Pacific St.
Children’s entertainment includes free carnival booths and games, face painting, balloon artists and jump houses. Lots of great food provided by non-profit food vendors will be on sale all day. Free Bike Valet provided by Green Pedal Couriers & Monterey Bay Bicycle Coalition will be located at the corner of Jefferson and Pacific Streets.
Blessed with LOTS of California strawberries? Make this basic summer salad. Love the patriotic colors. We had grilled steak with ours, so good!
Ingredients:
1 bunch of baby spinach leaves
2 cups sliced strawberries
1 cup fresh blueberries
3/4 cup crumbled feta or blue cheese (of choice)
½ cup sliced or diced nuts of choice- we used sliced almonds
Optional:
Top with grilled steak or chicken
Dressing:
Favorite balsamic or poppy seed dressing. We used olive oil and balsamic with fresh ground pepper.
Happy Fourth of July! Huckleberry Hugs from Pebble Beach, California.
(Extra love and hugs in heaven to Papa Archie and Nonna Cathy!)
