Hello from Huckleberry Hill!

Today, is the anniversary of the passing to heaven of my dear dad. We all adored Papa Archie. This cake is a favorite from childhood. I hope that you enjoy it. ‘Old school’ dump cakes! No bowls, no mess, no mixing, just fast and delicious. As my family, friends and readers know my dad recently passed away. This week (Thursday) would have been his birthday. In celebration of my wonderful father, I am re-posting this recipe. My dad Archie loved cherries so this easy dessert was a childhood family favorite.

“My grandkids all end up here beyond Sunday supper. Suddenly a crowd appears after their soccer game, or sharing their report card, or just to stop by for a Friday visit, which ends up with a sleepover. Keep chocolate cake mix, canned cherries on hand in the pantry. This simple dump cake is my grandchildren’s favorite. Besides being simple, the house is filled with a delicious aroma.”

 

On Huckleberry Hill, we have the same dynamics. My daughter brings unexpected friends over for a play date, my niece and nephew are over for a sleepover…and I end up looking into my pantry to feed an unexpected crowd.

One Stick of Butter (1/2 cup melted), Chocolate Cake Mix and Two cans of cherries

 

Vanilla Cherry Delight

One Stick of Butter (1/2 cup melted), Yellow or White Cake Mix and Two Cans of Cherries

Grease or spray a 9X13 pan. Dump in fruit, top with cake mix, drizzle on melted butter.

Bake- 350 degrees 40 minutes in 9X13 rectangle pan

Mary’s Georgia Cherry Crunch Cake

Perfect for Family Gatherings or Potlucks

Bake 350 degrees for 50 minutes in a 9×13 pan or casserole.

I (20 ounce) can crushed pineapple- with juices no need to drain!

1 (20 ounce) can of cherry pie filling

I box of yellow cake mix

1 stick (1/2/ cup) melted butter

1 cup of chopped pecans

Layer in fruit, add cake mix, top with nuts and drizzle on butter. Bake, eat and enjoy!!!

 

 

Huckleberry Hill Twist!

We had two cups of huckleberries in the freezer, so we added that to a version of a dump cake. Huckleberries can be difficult to find, and if found expensive. Here is a version using blueberries.

Huckleberry Cherry Delight

9X13 Casserole Dish- greased or sprayed

350 Degrees

Bake 35-40 minutes

(Use Blueberries or 2 cups huckleberries) 1 (21 ounce) can blueberry pie filling

1 (21 ounce) can cherry pie filling

1 Box white or yellow cake mix

¾ cup chopped nuts of choice such as walnuts or pecans (slivered almonds will also work)

½ cup melted butter (1 cube)

Cans of fruit go first on the bottom of the pan, toss in chopped nuts, add cake mix and drizzle top with melted butter.
